How to serve wine at a restaurant
This book is a sequel to the manga "Sushi and Wine'' (published by Gaia Books in 2017), which pursues a fun and easy-to-understand manga based on the themes of Japanese food and German wine, which are both popular worldwide.
While sushi restaurants without sommeliers are finding it difficult to offer wines that go well with sushi, this book carefully explains each step in a conversational format with many illustrations, covering the knowledge of wine, tastes and know-how, and how to pair it with seasonal ingredients.

[Synopsis]
Nobuzo, the second son of a sushi restaurant owner, a pianist and a lecturer at a music university in Tokyo, experiences a "sushi and wine club'' while studying abroad at a music university in Berlin. After returning to Japan, he once again participated in the "Sushi and Wine Society'' hosted by Noboshi, who was the MC for the group he had attended in Berlin, and became more and more interested in "Sushi and Wine.''
When the family's sushi restaurant passes from his father to his older brother, Shuzo, Katazo strives to incorporate wine as a new element and renovate it into a "sushi and wine restaurant.''

Author Nishion Edo has been running a German wine specialty store for over 30 years, and is currently working hard every day to spread a new style of sushi and German wine both in Japan and overseas. They actively hold "Sushi and Wine Meetings'' in Japan and overseas, and are highly rated by the locals.They propose the highest quality ways for adults to enjoy wine by combining knowledge and tradition of German wine.

Review
This book is a sequel to "Sushi and Wine'' and provides an easy-to-understand explanation of the case of introducing wine for the first time using a sushi restaurant as an example. This book focuses on German wine. This is because I am convinced that German wine best matches the Japanese food and tastes. I think you will understand it better if you read the first part as well. I hope this information will be useful not only for sushi restaurants but also for other restaurants.

Author: Edo Saion
Born in 1949 in Tokyo. Real name: Kazuo Hoshino. Graduated from Chiba University Faculty of Engineering in 1972. Studied abroad at the Technical University of Berlin in 1973. Since 1975, he has also been active as a photographer in Berlin. While living in Germany, he became fascinated with German wine and devoted himself to researching it. In 1984, "Complete Works of German Wine" was published. In the same year, he felt the need to introduce not only information but also wine itself, and established Winax Co., Ltd. In 1991, the pocket book "German Wine" was published. Since then, he has continued to introduce German wine to Japan, and in 2003 was awarded the National Cross of Merit by the Federal Republic of Germany.
